The only extra step is preparing simple syrup, which takes just a few minutes. You can make a larger batch and keep it refrigerated to speed up future cocktails.

Ingredients:

Kiwis — About three kiwis per cocktail, peeled and cut into chunks.

Gin — Use your preferred gin; any style works.

Simple Syrup — See the instructions below to make it quickly at home, or use store-bought.

Lime Juice — Freshly squeezed, approximately ½ ounce (about half a lime) per drink.

Club Soda — Adds effervescence without altering flavor; use another lemon-lime soda if you prefer a sweeter finish.

How to make simple syrup:

Simple syrup is equal parts granulated sugar and water heated until the sugar dissolves. It sweetens cocktails smoothly without gritty texture.

Combine equal parts sugar and water in a saucepan over medium heat, stirring until fully dissolved. Remove from heat and let cool to room temperature before using. Store any extra syrup in a sealed container in the refrigerator for up to a month.

Common batch sizes: 1 cup sugar + 1 cup water, or for a smaller amount use ¼ cup sugar + ¼ cup water.

Description

This kiwi gin cocktail is light, bubbly and quick to prepare—ideal for poolside afternoons or relaxed evenings.

Ingredients

  • 3 kiwis, peeled and cut into chunks
  • ½ oz fresh lime juice
  • 1 ½ oz simple syrup
  • 1 oz gin (increase to 2 oz for a stronger drink)
  • Handful of ice
  • 5 oz club soda to top

Instructions

  1. Add kiwis, lime juice and simple syrup to a blender or food processor and blend until smooth.
  2. Combine the kiwi purée, gin and a handful of ice in a cocktail shaker. Shake vigorously for 5–7 seconds until the shaker feels frosty.
