Ingredients

  • 1/4 cup 1 stick unsalted butter at room temperature
  • 1 cup brown sugar, packed
  • 1/2 teaspoon pure vanilla extract
  • 1 egg
  • zest and juice from 1/2 fresh orange
  • 1 teaspoon baking soda
  • 4 oz bittersweet chocolate (about 60% cacao), shaved
  • 2 cups all-purpose flour

Instructions

  • Preheat oven to 350 degrees F.
  • In the bowl of a stand mixer, cream together the butter and brown sugar on low until smooth.
  • Add vanilla and egg, mixing about one more minute. Scrape the bowl with a rubber spatula to ensure the egg is fully incorporated.
  • Stir in the orange zest and juice, then fold in the chocolate shavings. Mix briefly to combine.
  • In a separate bowl, whisk together the flour and baking soda.
  • Gradually add the dry ingredients to the wet mixture in the stand mixer.
  • Mix on low speed until everything is thoroughly combined, about 1 minute.
  • Scoop dough by the tablespoon onto a baking sheet and bake for 12 to 14 minutes, until edges are set and centers are just firm. Cool on a wire rack.

Notes

Reserve a small amount of chocolate shavings and orange zest to sprinkle over each cookie while they cool for an attractive finish.
