- Pistachios: The star ingredient. Raw shelled pistachios that you lightly roast yourself yield the best, freshest flavor. Pre-roasted pistachios are an acceptable substitute, but may be more intensely roasted or saltier—if so, reduce the added salt in the dough.
- Cornstarch: A small amount of cornstarch contributes to that melt-in-your-mouth shortbread texture. You can omit it if necessary, but it does noticeably improve tenderness and crumb.
- Cardamom: Ground cardamom adds a floral warmth. If you have whole green cardamom pods, freshly grind the seeds and use half the amount called for, as the freshly ground spice is more potent.

Pistachio Shortbread Recipe

Ingredients
- 1 cup (140 g) pistachios
- 2 ¼ cups (300 g) all-purpose flour
- 2 tablespoons (18 g) cornstarch
- ½ teaspoon ground cardamom
- ¼ teaspoon kosher salt
- ⅔ cup (135 g) granulated sugar
- 2 teaspoons (about 1 large orange) orange zest
- 8 oz (227 g) unsalted butter, softened to room temperature
- 1 teaspoon (5 g) pure vanilla extract
- Additional granulated sugar for sprinkling on top
Instructions
- Roast and chop pistachios: In a dry skillet over medium heat, toast the pistachios for 3–5 minutes until fragrant and lightly browned. Spread on a cutting board to cool, then chop into small pieces. Set aside.
- Prepare dry ingredients: In a medium bowl, sift or whisk together the flour, cornstarch and cardamom. Stir in the kosher salt and set aside.
- Cream butter and sugar: In a separate bowl, combine the granulated sugar and orange zest, rubbing them together to release the oils. Add the softened butter and vanilla and beat with a paddle attachment or hand mixer on medium speed until the mixture is smooth, light and well combined.
- Combine dough: Add the flour mixture and the chopped pistachios to the creamed butter. Mix on low at first to incorporate, then increase speed just until no streaks of flour remain and the dough holds together.
- Form logs and chill: Lay a long piece of plastic wrap on the counter. Divide the dough into two equal portions and shape each into a log about 6 inches long. Wrap tightly in plastic and refrigerate for at least 1 hour (or overnight) until firm. Dough can be refrigerated for 3–4 days or frozen for longer storage.
- Slice and freeze briefly: Using a sharp knife, slice each log into 12 rounds about ½ inch thick. Rewrap and place the sliced rounds in the freezer while the oven preheats; you can bake from frozen if desired.
- Preheat oven: Position a rack in the middle of the oven and preheat to 350°F (177°C).
- Bake: Arrange 12 cookies on a lined baking sheet, spacing them about 2 inches apart. Lightly sprinkle tops with a little granulated sugar. Bake one tray at a time for 20–25 minutes, or until the outer edges are golden. For softer cookies aim for about 20 minutes; for crispier cookies bake closer to 25 minutes.
- Cool: Remove the baking sheet from the oven and allow the cookies to rest on the sheet for 5–10 minutes so they finish setting from residual heat. Transfer to a wire rack to cool completely.
Notes
- Baking time: 20 minutes produces a tender, crumbly shortbread; 25 minutes yields crispier cookies. Around 22 minutes is a good compromise.
- Storage (baked cookies): Store in an airtight container at room temperature for up to one week.
- Storage (dough): Dough logs keep refrigerated for 3–4 days or can be sliced and frozen for 3–6 months. Bake frozen slices directly from the freezer—no need to thaw.
