Creamy Carrot Nog Recipe: Spiced Holiday Carrot Milk Punch

The other side was even worse, but I ended up with some great new dishes. My husband’s family visited from Oregon and happily served as taste testers — which was fun and helpful!

Today’s recipe is especially great if you follow a vegan diet or are simply looking for a healthier treat: a festive, creamy Carrot Nog.

Carrot Nog!

Carrot Nog started as my attempt to recreate eggnog in a healthier, dairy-free version, and it quickly became a holiday favorite I make all year round.

Carrot Nog

A delicious and healthy twist on a classic Christmas drink!

Ingredients

  • 1 c. coconut milk
  • c. fresh carrot juice I got this by juicing 3 carrots
  • t. salt
  • 2-3 t. maple syrup
  • 1/8-1/4 t. nutmeg freshly ground, if possible…the pre-ground stuff is not as good
  • 1 T. coconut oil melted
  • 1 ½ t. slippery elm powdered (optional, but it adds to the sweetness and thickness)

Instructions

  • Blend all ingredients until completely smooth and combined.
  • Chill in the refrigerator for a short while to let flavors meld and serve cold.
  • Garnish with shredded carrot, toasted coconut, or whipped coconut cream if desired. Enjoy!

One optional ingredient, slippery elm powder, helps thicken the drink and adds sweetness. It also has soothing properties that have been used traditionally for:

  • gastrointestinal relief, such as for irritable bowel symptoms
  • soothing the throat and respiratory passages during coughs or bronchitis
  • supporting skin healing for irritations like psoriasis and minor burns

These are some of the traditional uses people associate with slippery elm, and they offer another reason to try this creamy, healthy, and delicious beverage.
