Ingredients

- Garnet yams / sweet potatoes: Orange-fleshed garnet yams are ideal — sweet and they crisp up nicely.
- Avocado oil, extra virgin olive oil, or melted coconut oil: A coating of oil helps the fries crisp. For air fryer fries, an avocado oil spray works well.
- Diamond Crystal kosher salt to taste.
- Freshly ground black pepper to taste.
- Smoked paprika for a smoky finish; ground cinnamon or other spices can be used instead.
How to make sweet potato fries
Preheat the oven to 375°F on convection bake, or 400°F for a conventional oven.
Peel the sweet potatoes and cut them into even matchsticks so they cook uniformly.

Arrange the fries in a single layer on a rimmed baking sheet lined with foil or parchment (parchment yields a crispier exterior). Toss with your chosen oil, salt, pepper, and smoked paprika.
