- Bell peppers: One red and one green are recommended, diced.
- Spices: Chili powder, cumin, smoked paprika, crushed red pepper (optional), cinnamon, oregano, garlic powder, and onion powder create warm, layered flavor.
- Tomatoes: Canned diced or crushed tomatoes; fire-roasted works well too.
- Tomato sauce: Plain canned tomato sauce (not marinara).

Step-By-Step Instructions:
Tip: Let the meat sit at room temperature for about 20 minutes before searing for more even cooking. Cut a 3–4 lb chuck roast into 3–4 even chunks, pat dry, and season generously with sea salt.


- Sear the beef: Heat olive oil over medium-high heat in a large skillet. When the oil shimmers, brown the beef 2–3 minutes per side. Remove and set aside.
- Prepare the crockpot: Chop the vegetables and drain and rinse the beans. Add the chiles, peppers, onion, diced tomatoes, tomato sauce, beef stock (or omit for thicker chili), sugar, Worcestershire, spices, and seasonings to the slow cooker. Stir to combine.
- Add the beef: Nestle the seared beef into the mixture. It does not need to be fully submerged; juices released during cooking will cover it.
- Cook low and slow: Cook on low for about 8–10 hours until the meat shreds easily with a fork, or on high for 4–6 hours.
- Shred and finish: Remove the beef pieces, shred with two forks, discard large pieces of fat, and return the meat to the slow cooker. Stir in tomato paste to thicken if desired. Serve with your favorite toppings.

Ingredients
- 3½ lb beef chuck roast, approximately

- ⅓ cup beef stock (optional)
- 1 tsp Worcestershire sauce
- 1 can kidney beans, rinsed (15.5 oz)
- 1 can pinto beans, rinsed (15.5 oz)
- 1 can green chiles (4 oz)
- 3 T chili powder
- 1 T cumin
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp oregano
- ½ tsp onion powder
- ½ tsp pepper
- ½ tsp sea salt
- ⅛ tsp cinnamon
- 1 tsp sugar
- ¼–½ tsp crushed red pepper (optional)
- 3 T tomato paste
Instructions
