Supreme Pizza Chicken Bake Recipe Low Carb -Step by Step, an super easy and delish weeknight dinner

I developed this Supreme Pizza Chicken Bake to deliver all the familiar pizza flavors without the extra carbs or added sugar. It’s a great alternative to traditional pizza nights: high in protein, full of vegetables and cheese, and quick to assemble. If you enjoy weekly meal plans or family pizza night, this recipe gives you the same satisfaction with less fuss and healthier ingredients.

The secret is a thick, concentrated sauce made from tomato paste rather than watery store-bought sauces. Tomato paste gives you rich tomato flavor without excess liquid or added sugar, so the sauce stays on the chicken as it bakes instead of pooling in the dish. I thin the paste just enough with a splash of olive oil and season it with classic pizza spices to make a spreadable sauce that’s simple and delicious.

Once the sauce is mixed, the recipe is mostly assembly: layer the chicken, spread the sauce, top with cheese and vegetables, then bake. This is an easy, family-friendly weeknight dinner that often beats making a full pizza from scratch.

The Ingredients

For the sauce:

  • Tomato paste — this concentrated tomato product is thicker and less watery than tomato sauce, so it will cling to the chicken and give a robust tomato flavor without added sugar.
  • Olive oil — just a teaspoon to loosen the paste and make it spreadable.
  • Spices — salt, black pepper, garlic powder, oregano, and parsley to give a classic pizza sauce profile.

For the bake:

  • Chicken — use four chicken breast cutlets (about 6–8 ounces each). If your grocery chicken breasts are large, butterfly them or slice into cutlets so they cook evenly and in the same time as the recipe indicates.
  • Mozzarella — shredded mozzarella melts beautifully and is the easiest to use, whether pre-shredded or freshly shredded.
  • Toppings — to make this a “supreme” pizza-style bake, use a mix such as sliced green bell pepper, sliced onion, black olives, and pepperoni. You can also add mushrooms, green olives, or banana peppers as desired. Some vegetables release a bit of moisture while baking, but that won’t harm the thick sauce.

Method

Prepare your oven and toppings first so assembly goes fast. Preheat the oven to 400°F (204°C). Slice peppers, onion, and any other vegetables you plan to add.

Make the sauce: in a small bowl combine the tomato paste, olive oil, salt, black pepper, garlic powder, oregano, and parsley. Stir until the paste is spreadable and well seasoned.

Arrange the chicken cutlets in a single layer in a 9×13-inch baking dish. Divide the sauce among the four cutlets and spread it evenly over each piece using the back of a spoon. Sprinkle about 1/4 cup shredded mozzarella on each chicken breast, then distribute the remaining toppings over the cheese.

Bake for about 30 minutes, or until the chicken reaches a safe internal temperature and is cooked through. Remove from the oven and let rest for 3–5 minutes before serving so the juices settle and the cheese firms up slightly.

Tips & Tricks

  • Customize the toppings to match your family’s preferences — mushrooms, banana peppers, or extra olives all work well.
  • If using very large chicken breasts, cut them into cutlets or butterfly them to ensure even cooking in 30 minutes.
  • Shredded mozzarella is convenient and melts consistently; you can substitute sliced or fresh mozzarella if you prefer, but adjust layering so the chicken heats evenly.
