Pasta alla Norma is a Sicilian classic that celebrates simplicity and high-quality ingredients in one glorious dish. Rigatoni (or other short pasta) is tossed in a fresh tomato and basil sauce and finished with slices of fried eggplant and grated cheese.

I keep an extensive Italian recipe collection because I adore this cuisine. I’ve spent many visits in Italy over the years and, for me, the country’s food remains the single biggest attraction. This particular recipe—Pasta alla Norma—comes from Sicily and represents the region perfectly: modest technique, bold flavors, and an emphasis on ingredient quality.
My introduction to many authentic Italian recipes came from friends and hosts I met traveling, and from cooks who grew up with these dishes. Pasta alla Norma is one of those recipes that keeps appearing on menus and home tables throughout Sicily. It originally comes from Catania and was inspired by the opera “Norma.” Despite its simple elements, the dish has become a symbol of Sicilian home cooking.

Classic Sicilian Pasta Recipe
The charm of Pasta alla Norma lies in its few, high-quality components: ripe tomatoes, fragrant basil, firm pasta, and soft, savory eggplant. In southern Italy, tomatoes are prized for their sweetness and fleshiness; when they are at their best they define the sauce. For the cheese topping, authentic recipes call for ricotta salata, a salted and pressed sheep’s cheese that is crumbly and tangy. If ricotta salata isn’t available, Pecorino Romano or Parmesan are excellent substitutes that deliver the right salty, savory finish.
To make the most of this dish, choose the best ingredients you can find. Fresh tomatoes or a good-quality passata will make a noticeable difference. Fresh basil adds aroma and brightness that dried herbs can’t match. And when preparing the eggplant, avoid heavy greasiness by frying carefully or roasting/grilling for a lighter result.

Recipe Tips and Notes
- Use the best quality canned tomatoes or fresh passata you can find. The sauce is simple, so the tomatoes carry the flavor.
- Always prefer fresh basil to dried for maximum aroma and flavor.
- Eggplant is very absorbent and can become greasy if fried in too much oil. To reduce oil, slice and roast or grill the eggplant slices until tender and slightly charred for a similar texture with less oil.
- If you do pan-fry the eggplant, work in batches to avoid overcrowding and drain the cooked slices on paper towels to remove excess oil.

Sicilian Pasta alla Norma
Ingredients
- 450g / 1 lb rigatoni or other short pasta
- 2 medium eggplants
- 3 tbsp olive oil, divided
- 1 clove garlic, minced
- 500 ml / 2 cups tomato passata or crushed tomatoes
- 4–5 fresh basil leaves
- Salt to taste
- 1 pinch sugar (optional, to balance acidity)
- 2 tbsp Pecorino Romano or Parmesan, grated (or ricotta salata if available)
Instructions
- Bring a large pot of water to a rolling boil for the pasta. Add salt to the water just before adding the pasta.
- Make the sauce: heat 1 tablespoon olive oil in a large pan over medium heat. Add the minced garlic and cook briefly until fragrant (about 20 seconds). Pour in the passata or crushed tomatoes, add the basil leaves, and season with a pinch of salt and a small pinch of sugar if needed. Simmer the sauce gently over low heat for about 15 minutes to develop flavor.
- Add the rigatoni to the boiling water and cook according to package instructions until al dente.
- While the pasta cooks, prepare the eggplant: slice into roughly 1 cm / 3/8 in thick rounds. Heat the remaining 2 tablespoons of olive oil in a frying pan and fry the eggplant in batches until golden and tender, about 2–3 minutes per side. Drain the cooked slices on paper towels to remove excess oil. Alternatively, roast or grill the slices until tender for a lighter finish.
- Drain the pasta, reserve a splash of the cooking water, and toss the pasta in the tomato sauce over low heat, adding a little pasta water if needed to achieve a silky coating. Adjust seasoning with salt.
- Serve the pasta topped with fried or roasted eggplant slices and finish with grated Pecorino, Parmesan, or ricotta salata.
