With summer approaching, I find myself reaching for more portable, nutritious snacks. Warmer weather and longer days mean I want to be outside as much as possible — walking to the beach, hiking, relaxing at the park, or exploring new trails — and I need fuel that travels well. These energy bites are perfect for taking along on any adventure.

I already have a handful of energy-ball recipes, but I haven’t used coconut butter in one until now. Lately I’ve been spooning coconut butter straight from the jar, so it felt right to let it shine in a recipe. Paired with matcha, the coconut butter develops a bright green hue and the flavor becomes reminiscent of a matcha latte when combined with vanilla and a touch of honey.

Hemp seeds add protein, fiber, and nutrients like iron and magnesium, while unsweetened shredded coconut contributes texture and extra coconut flavor. Ingredients
  1. 3/4 cup raw coconut butter
  2. 2 tablespoons virgin coconut oil
  3. 2 tablespoons raw honey
  4. 1 teaspoon matcha powder*
  5. 1 teaspoon vanilla extract
  6. 1/2 cup unsweetened shredded coconut**
  7. 1/4 cup raw hemp seeds (hemp hearts)**
Instructions
  1. 1. If both the coconut butter and coconut oil are solid at room temperature, place them in a microwave-safe bowl and heat in 10-second intervals until just soft and stirrable, but not completely melted. Alternatively, warm gently in a small saucepan over low heat. If your kitchen is warm and the coconut butter and oil are already soft, skip heating and proceed.
  2. 2. Add the honey, matcha powder, vanilla, shredded coconut, and hemp seeds to the bowl. Stir thoroughly until fully combined. If the mixture is too soft to scoop, chill in the freezer for 5 minutes to firm up. Use a small cookie scoop or a spoon to portion the bites and roll them if desired.
  3. 3. Store the energy bites in an airtight container at room temperature for up to 5 days, or refrigerate for up to 2 weeks. Note that coconut oil and butter firm up when chilled, so room temperature yields a softer, more pleasant texture.

  1. *Use a good-quality matcha for best flavor. A small tin of ceremonial-grade matcha goes a long way.
  2. **If you prefer, substitute a combined 3/4 cup of shredded coconut or hemp seeds in place of using both.
