Blackstone Lazy Beef Enchiladas is an adapted recipe from my “I Love My Blackstone Griddle” Cookbook.
In my cookbook, which contains 175 Blackstone recipes, there’s a chicken version of this same easy, budget-friendly dinner.

How to make Blackstone Lazy Beef Enchiladas
This recipe is designed for minimal prep — open a few cans, cut the tortillas, load a tray and cook on your griddle.

The only real prep is cutting 6 to 8 yellow corn tortillas into roughly one-inch pieces or strips.

Preheat your Blackstone or another flat top griddle to medium heat. Add a little cooking oil, then cook 1 pound of ground beef seasoned with kosher salt, pepper, and your preferred taco or fajita seasoning.
Once the beef is mostly cooked, add the torn tortillas and pour the green enchilada sauce over everything right on the griddle.

Stir in canned corn (drained), rinsed black beans, a can of green chiles, and about 1/2 cup sour cream. Season again with salt, pepper, and a little extra taco or fajita seasoning to taste.

When the mixture is well combined and hot, sprinkle half the shredded cheese over it and mix briefly so it starts to melt through. Top with the remaining cheese and let it melt fully.

Mix it all together on the griddle and that’s it… Blackstone Lazy Beef Enchiladas are done!
We finished ours with a dash of hot sauce and a handful of Fritos for crunch, but crushed tortilla chips work great too.

Ingredients
- Cooking oil of choice
- 1 pound ground beef
- Kosher salt, pepper, taco or fajita seasoning blend
- 6 to 8 yellow corn tortillas cut into inch-size pieces or strips
- 2 (10-ounce) cans green enchilada sauce
- 1 (4-ounce) can green chiles
- 1 (14-ounce) can corn drained
- 1 (14-ounce) can black beans drained and rinsed
- 1/2 cup sour cream
- 2 cups shredded cheese of choice
- Optional: hot sauce, Fritos or tortilla chips
Instructions

Preheat your Blackstone griddle to medium heat. Add cooking oil, ground beef, kosher salt, pepper, and taco or fajita seasoning. Cook 5 to 6 minutes, breaking it apart with spatulas.

Add the tortillas, enchilada sauce, green chiles, corn, black beans, sour cream, and additional salt, pepper and seasoning. Mix together and cook on the griddle for 2 to 3 minutes until heated through.

Stir in half the cheese, then top with the remaining cheese. Remove from the griddle once the cheese is melted. I like to scoop it onto a tray straight from the griddle.

Serve with hot sauce and Fritos or crushed tortilla chips if desired.
