They’re also quick and easy to prepare, ideal for a simple weeknight meal or for serving at a gathering. Using whole wheat mini pitas adds fiber and makes the pizzas more filling. Two of these with a small salad makes a balanced, tasty dinner.

Ingredients
- 4 mini – whole wheat pitas
- 3 oz goat cheese
- 4 figs – thinly sliced
- 2 tbsp real bacon bits
- 1 cup arugula
- 1 tbsp honey
- 1 tbsp balsamic vinegar
Instructions
-
Preheat the oven to 400°F (200°C).
-
Line a small baking sheet with foil and lightly spray with nonfat cooking spray. Arrange the mini pitas on the sheet.
-
Spread the goat cheese evenly over the pitas, then top with thinly sliced figs and bacon bits.
-
Bake for about 10 minutes, or until the edges of the pitas begin to brown and crisp.
-
While the pitas bake, warm the honey and balsamic vinegar together in a small saucepan over low heat until combined and warmed through.
-
Remove the pitas from the oven, top each with arugula, and drizzle with the honey-balsamic glaze. Return to the oven for another 3–5 minutes, just until the arugula begins to wilt. Serve warm.
