This layered dip combines creamy refried black beans, seasoned vegan sour cream, bright avocado and salsa verde, and colorful heirloom tomatoes. It’s flavorful, easy to assemble, and looks great on a party platter.

Ingredients

  • 1 can refried black beans
  • zest and juice of 1 lime
  • 2 teaspoons rum
  • 1/4 to 1/2 teaspoon chipotle powder
  • 1/4 cup vegan sour cream
  • 2 tablespoons green chilis
  • 1 avocado
  • 1/4 cup salsa verde
  • 1 to 2 cups heirloom tomatoes, chopped
  • smoked salt, to taste

Instructions

  1. Layer 1 – Beans
  2. Combine the refried black beans with lime zest and juice, rum, and chipotle powder in a food processor. Blend until smooth, scraping down the sides as needed. Spread the mixture evenly across the bottom of your serving dish.
  3. Layer 2 – Sour cream
  4. Stir together the vegan sour cream and green chilis. Spread this layer over the beans, leaving some of the bean layer visible around the edges for contrast.
  5. Layer 3 – Green guacamole
  6. Mash the avocado and mix with the salsa verde until combined. Gently spread the avocado mixture over the sour cream layer.
  7. Layer 4 – Heirloom tomatoes
  8. Toss the chopped heirloom tomatoes with a pinch of smoked salt and sprinkle them over the avocado layer as the final topping.
