How to make pumpkin spinach feta salad
Preheat the oven: Set the oven to 180°C / 350°F and line a baking sheet with parchment paper.
Prepare the pumpkin: Toss cubed pumpkin with 2 teaspoons of olive oil, season with salt and pepper, arrange in a single layer and roast for 20–25 minutes until tender and lightly golden. Avoid overcooking so the pieces hold their shape.
