  • Reusable straining bag (for the brine)
  • Deep-dish roasting pan with a lid

Ingredients

For the apple cider turkey brine

  • 8 cups water
  • 5 apples, quartered (plus extra to garnish)
  • 1 orange, quartered with peel (plus extra to garnish)
  • 2 tablespoons minced ginger
  • 1½ tablespoons whole cloves
  • 1 pomegranate, quartered
  • ½ cup brown sugar
  • 3 cinnamon sticks

For the turkey

  • 10–15 pound turkey
  • 2 tablespoons Famous Dave’s Country Roast Chicken Seasoning (or similar)
  • 2 tablespoons roasted garlic & herb seasoning (or similar)
  • 4–6 sprigs fresh herbs (rosemary, parsley, thyme) for garnish

Instructions

  1. In a large pot over medium heat, combine water, apple slices, and brown sugar.
  2. Place cloves, ginger, cinnamon sticks, pomegranate, and orange slices into a strainer bag, tighten it, and submerge in the pot.
  3. Simmer gently for 40 minutes, then remove the strainer bag and scoop out the apples with a slotted spoon.
  4. Preheat the oven to 350°F.
  5. Mix the two seasonings in a small bowl to form a Southern spice rub.
  6. Place the turkey in a deep-dish roasting pan. Spoon some apple cider brine over the turkey and rub the spice mix all over, including under the bird.
  7. Pour additional apple cider into the pan for roasting. Add more rub where it may have washed off.
  8. Place the turkey uncovered on the lower oven rack and roast at 350°F for 1 hour 30 minutes, basting with pan juices every 20–30 minutes.
  9. When finished, baste once more with pan juices and let the turkey rest 20–30 minutes before carving.
  10. Garnish with fresh herbs and apple or orange slices. Serve with pan juices or giblet gravy if desired.
