Ritz Cracker Thin Mints
This sweet-and-salty, mint-chocolate no-bake dessert is a crowd-pleaser and incredibly quick to prepare.
These copycat Thin Mints are made with just two ingredients and a little time to set. The minty flavor makes them a seasonal favorite and a great companion to other peppermint desserts.
Ingredients
Ritz Crackers | Use a sleeve of classic Ritz crackers for the best texture and flavor balance.
Andes Mints | Andes mint chocolates or Andes baking chips work perfectly. If you prefer, you can use semi-sweet melting chocolate plus a small amount of peppermint extract to achieve a similar mint-chocolate taste. The Andes candies make this a true two-ingredient recipe and are the easiest option.
How To Make Ritz Cracker Thin Mints
Prepare two cookie sheets by lining them with parchment paper, wax paper, or silicone baking mats. This ensures the chocolate-covered crackers won’t stick while they set.

Place the Andes Mints (or baking chips) in a microwave-safe bowl and heat in short bursts. Start with 30 seconds, stir, then heat in 15-second intervals, stirring between each, until fully melted. You can also melt them in a double boiler if you prefer.

Working one cracker at a time, use a fork to dip each Ritz into the melted chocolate, letting excess chocolate drip back into the bowl. Place each coated cracker on the prepared sheets in a single layer.
Let the chocolate set at room temperature for 15–30 minutes. To speed this up, chill the trays in the refrigerator until the chocolate is firm.

Storing and Freezing Homemade Thin Mint Cookies
To store, arrange the Thin Mints in an airtight container with parchment paper between layers to prevent sticking. At room temperature (kept in a cool, shaded spot), they’ll stay fresh for up to five days.
For longer storage, refrigerate the cookies for up to two weeks. Many people prefer the firmer texture and chilled flavor straight from the fridge.
To keep them even longer, freeze the Thin Mints in a freezer-safe bag for up to three months. You can enjoy them straight from the freezer or thaw them briefly at room temperature.
Can I Use Gluten-Free Crackers?
Yes—you can substitute gluten-free crackers if needed. The flavor and texture may vary slightly depending on the cracker, but the method remains the same. If you try a different cracker, consider leaving a note about which one you used to help others.
