Recipe Notes
- Pasta Puttanesca: This adaptable Italian classic works with many pasta shapes. Taste for salt from anchovies, capers and olives and add a pinch of sugar if the tomatoes taste too acidic.
- Butternut Squash Curry: Any winter squash works well. A small pinch of cinnamon or extra warming spice can lift the flavour.
- Pork Curry with Coconut Sauce: Adjust chilli and spice to suit your family. Swap coconut milk for coconut cream for a richer sauce or use chicken or tofu if preferred.
- Prawn Rice: Add extra vegetables such as peas, bell peppers or spinach to increase bulk and make it vegetarian by swapping prawns for firm tofu and extra beans.
- Beef Stew with Cheddar Dumplings: Try different cheeses in the dumplings for subtle flavour changes and use slow-cooked or pressure-cooked beef for tender results.
