It’s finally chilly outside, and I’m excited to share my Toasted Marshmallow Campfire Cocktail. This warm cocktail blends marshmallow syrup, vanilla rum, Irish cream, and a splash of whiskey. Garnish with a toasted marshmallow and enjoy it by a fire pit or fireplace on cool evenings.
Welcome to the cozy season—where fires, toasted marshmallows, and a comforting drink are the perfect combination.

Instructions
Marshmallow Simple Syrup
-
In a small saucepan over medium heat, combine the water and granulated sugar and bring to a gentle simmer. Once the sugar dissolves, increase heat to medium-high and add the marshmallows.
-
Stir until the marshmallows melt and the mixture is smooth. Strain through a fine mesh sieve into a small bowl and set aside to cool.
Campfire Cocktail
-
Measure and combine marshmallow simple syrup, Irish cream, and vanilla rum. Gently warm the mixture on the stove or in a microwave-safe mug—serve warm, not scalding hot.
-
Pour into a small Irish coffee glass or heatproof mug.
-
Skewer a marshmallow on a bamboo pick, toast it with a kitchen torch until golden and slightly charred, then place it on top as a garnish. Add a splash of whiskey if desired.
Notes
You’ll have leftover marshmallow syrup—store it in an airtight container in the refrigerator and use it for additional cocktails or as a drizzle over desserts.
