This hot fall cocktail combines Irish cream, vanilla rum, whiskey, and homemade marshmallow simple syrup for a sweet, toasty finish.

Ingredients

Marshmallow Simple Syrup

  • 1 Cup (250 ml)
  • 1 Cup (200 grams) Granulated Sugar
  • 10 Marshmallows regular sized (not jumbo or mini)

Campfire Cocktail

  • 1.5 oz Irish Cream
  • 1.5 oz Vanilla Rum
  • 1 oz Marshmallow Simple Syrup
  • Splash Whiskey

Garnish

  • Roasted Marshmallow

Instructions

Marshmallow Simple Syrup

  • In a small saucepan over medium heat, combine the water and granulated sugar and bring to a gentle simmer. Once the sugar dissolves, increase heat to medium-high and add the marshmallows.
  • Stir until the marshmallows melt and the mixture is smooth. Strain through a fine mesh sieve into a small bowl and set aside to cool.

Campfire Cocktail

  • Measure and combine marshmallow simple syrup, Irish cream, and vanilla rum. Gently warm the mixture on the stove or in a microwave-safe mug—serve warm, not scalding hot.
  • Pour into a small Irish coffee glass or heatproof mug.
  • Skewer a marshmallow on a bamboo pick, toast it with a kitchen torch until golden and slightly charred, then place it on top as a garnish. Add a splash of whiskey if desired.

Notes

You’ll have leftover marshmallow syrup—store it in an airtight container in the refrigerator and use it for additional cocktails or as a drizzle over desserts.
