  2. 1/4 cup plus 2 tablespoons honey, divided, plus more for serving
  3. 1 tablespoon freshly squeezed lime or lemon juice
  4. 2 tablespoons plus 1 teaspoon chia seeds
  5. 3/4 cup heavy cream
  6. 3/4 cup plain Greek yogurt
  7. Granola, for serving (optional)
Instructions
  1. Place the diced strawberries in a pot and bring to a simmer over medium heat. Cook, mashing occasionally, until the berries break down and release their juices, about 8 minutes. Remove from heat and stir in 1/4 cup honey, the lime or lemon juice, and 2 tablespoons chia seeds. Let cool to room temperature. If you prefer a thicker texture, stir in the remaining teaspoon of chia seeds. Transfer the mixture to an airtight container and chill in the refrigerator.
  2. In a medium bowl, beat the heavy cream with an electric mixer until soft peaks form. Fold in the Greek yogurt and the remaining 2 tablespoons of honey until the mixture is smooth and slightly fluffy.
  3. Divide the chilled strawberry chia mixture among four glasses or bowls. Top with a generous dollop of the yogurt whipped cream, sprinkle with granola if desired, and drizzle with additional honey before serving.
