Ingredients
- 1 English cucumber seedless
- 1 pint cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- ½ tsp dried oregano
- ¾ tsp kosher salt Diamond Crystal preferred
- ¼ tsp ground black pepper
- 1–2 oz crumbled feta
Instructions

Using a large, sharp knife, slice the English cucumber into ¼-inch rounds, then quarter each round. Place the cucumber pieces in a large bowl. Halve the cherry tomatoes and add them to the bowl.

Measure the olive oil, red wine vinegar, oregano, salt, and pepper into a jar with a lid. Secure the lid and shake until combined. Pour the dressing over the vegetables, add the crumbled feta, and gently toss. Serve immediately.
Notes
- An English cucumber is ideal because it has few seeds; use another variety if you don’t mind a few seeds.
- Cherry or grape tomatoes work best for easy halving, but any tomato cut into bite-sized pieces will do.
- For best texture, don’t make this salad too far in advance—cucumber can soften over time. You can chop the vegetables ahead and keep them refrigerated in an airtight container, then toss with the dressing and feta just before serving.
