Happy Tuesday, friends! With spring break in full swing for many, I’ve been daydreaming about sunshine and tropical flavors. These Piña Colada Smoothie Bowls are simple, bright, and creamy—made with only a few wholesome ingredients. Fresh pineapple and coconut chunks form the base, then you add your preferred milk and a splash of lime juice. That little zing of lime pulls the whole bowl together and keeps the flavor lively.

I first made this recipe after finding fresh coconut chunks in the freezer at Trader Joe’s. I didn’t have a plan when I tossed them in my cart, but once I started experimenting a tropical smoothie bowl felt perfect. The smoothie itself is fast and fuss-free, but the toppings are where it gets fun. I like to add thin pineapple slices, lime, hemp hearts, and coconut chips for contrast—creamy, crunchy, sweet, and tart all in one spoonful.

I don’t always make smoothie bowls—mornings are busy and I often grab a quick shake instead—so when I do sit down to build one I enjoy arranging the toppings. It’s a small creative pleasure that makes breakfast feel special. These piña colada bowls are one of my favorite simple treats: pretty, refreshing, and satisfying.
