This recipe is quick, straightforward and uses minimal ingredients. You will need:

  • Onions
  • Garlic
  • Boneless chicken (thighs preferred, breast works too)
  • Full-fat yogurt
  • Spices: salt, coarsely ground black pepper, cumin powder and coriander powder
  • Fresh coriander and green chilli to garnish (optional)

The dominant flavour comes from coarsely ground black pepper — it is the star of this dish. Rather than being overwhelmed by a long list of spices, the other ingredients sit back and support the peppery, savory profile. The result is a mature, bold dish that still feels simple and clean on the palate.

How to make Chicken Kali Mirch

Begin by finely dicing the onion. Heat oil in a wide pan or karahi-style wok and add the diced onion. Fry the onions over medium-high heat until they start to turn golden and begin to soften — finely diced onions break down faster and will “melt” into the gravy more quickly.

Add garlic paste, the boneless chicken pieces and the spices: salt, cumin, coriander and most of the coarsely ground black pepper (reserve a little to adjust at the end if you prefer a stronger pepper flavour). Fry everything together until the chicken is no longer pink on the outside.

Stir in the full-fat yogurt (beat it vigorously before adding to reduce the chance of curdling). Continue to sauté the mixture for about 8–10 minutes until the yogurt reduces and concentrates into a thick, glossy paste and you see oil beginning to separate at the edges.

Pour in about half a cup of water, bring to a gentle boil, then cover and simmer on low heat for 20 minutes so the chicken cooks through and the flavours meld.

Remove the lid and cook uncovered over medium-high heat for a few minutes until the gravy thickens, becomes glossy and the oil separates again around the edges. Adjust the consistency to your preference — dry it out a little for a drier finish or leave a looser gravy if you prefer.

Garnish with chopped fresh coriander and sliced green chillies if you like a fresh herbal lift and extra heat. Serve hot.

🌶️ Is Chicken Kali Mirch spicy?

This recipe isn’t a fiery curry, but the coarsely ground black pepper brings a warm heat that feels different from red chilli heat. If you want more spice, increase the black pepper or add green chillies when you add the yogurt — whole, slit, or blended into a paste.

A strong recommendation: avoid red chilli powder if you want the classic Kali Mirch look and flavour. Red chilli will tint the yogurt and alter the dish’s character. For more heat, stick to black pepper or fresh green chillies.

🍗 Best cuts of chicken to use

Boneless chicken thigh is my top pick — it stays juicy and lends richness to the dish. Chicken breast works fine and will yield a firmer texture. You can also use minced chicken (keema) or bone-in chicken if you prefer: simply substitute the same weight and adjust cooking time slightly for bone-in pieces.

🥣 How to avoid yogurt curdling

Yogurt curdling is common but avoidable. Two effective tips:

  • Beat the yogurt vigorously until smooth before adding it to the pan. This evens out temperature differences and reduces separation.
  • If you have time, remove the pan from heat and allow it to cool slightly so it’s warm rather than hot before adding yogurt, then return to the heat slowly. This is more time-consuming but reduces curdling risk further.

  • 4 tablespoons (60 ml) oil
  • 1.5 medium onions (about 165 g), finely diced
  • 1 heaped teaspoon garlic paste
  • ½ kg (1.1 lb) boneless chicken, cut into bite-sized pieces
  • 3–4 teaspoons coarsely ground black pepper (start with 3, add the 4th near the end if desired)
  • 1 teaspoon salt
  • ½ teaspoon cumin powder
  • ½ teaspoon coriander powder
  • 150 g (0.6 cups) full-fat yogurt
  • Fresh coriander and green chillies, for serving

Instructions

  • Heat the oil in a wok or karahi-style pan. Add the finely diced onions and fry over medium-high heat until they begin to turn golden.
