I’m doing my part to keep pork farmers busy with the amount of bacon we eat at our house. We have BLTs weekly, sprinkle bacon crumbles on salads, and I always keep at least two pounds of bacon in the fridge — not counting what’s in our freezers. Naturally, these stuffed bacon cheeseburgers caught my eye in Gooseberry Patch’s Garfield…Recipes with Cattitude! cookbook.
If your household squabbles over beef burgers versus pork burgers, this recipe settles the debate by using both. It also includes simple fillers that help the patties hold together while adding flavor.
I also swapped in one of my favorite homemade sauces from a North Dakota friend in place of traditional steak sauce — it adds a nice tang without overpowering the bacon and cheese.
Bacon Burgers – Stuffed Bacon Cheeseburgers
In a large bowl, combine ground beef and ground pork. Add grated Parmesan, steak or barbecue sauce, garlic powder, and black pepper. Mix thoroughly — use your hands to ensure the seasonings and cheese are evenly distributed. A spoon won’t do this justice.
Fry the bacon until crisp, then remove it from the skillet and reserve the drippings. Sauté chopped onion and sliced button mushrooms in the bacon fat until tender. Combine the cooked bacon (crumbled), onions, and mushrooms — this will be the stuffing for the burgers.
The trick is to form eight thin patties, each slightly larger than your buns. Place a portion of the bacon-mushroom-onion mixture on four patties, then top with the remaining patties and seal the edges well so the filling stays inside while grilling.
Grill the burgers over medium heat for about 5–8 minutes per side, flipping only once to avoid breaking the seal. Add provolone slices during the last minute of cooking so the cheese melts perfectly. We like to toast onion buns with a little melted butter on the grill — it pairs beautifully with these stuffed bacon cheeseburgers.
These burgers come out juicy and full of savory pork flavor with a melty cheese finish. They’re the perfect centerpiece for a casual meal — the kind of “Hunk of Meat Monday” dinner that everyone looks forward to.

Ingredients
- 3-4 slices of bacon
- 1/4 onion, chopped
- 4-5 button mushrooms, sliced
- 1/2 lb ground beef
- 1/2 lb ground pork
- 2 T grated Parmesan cheese
- 1 T steak or barbecue sauce
- 1/4 t garlic powder
- 1/4 t black pepper
- 4 slices Provolone cheese
- 4 onion buns

In a skillet over medium heat, cut bacon into 1/2-inch pieces and fry until crisp. Remove the bacon and reserve the drippings in the skillet. Use the drippings to sauté the chopped onion and sliced mushrooms until tender, then set the mixture aside with the bacon.

In a large bowl, combine the ground beef, ground pork, grated Parmesan, steak or barbecue sauce, garlic powder, and black pepper. Mix with your hands and form eight thin patties slightly larger than the buns.

Divide the bacon-mushroom-onion mixture among four patties. Top each with another patty and seal the edges well. Grill the burgers 5–8 minutes per side, flipping only once to prevent them from falling apart. Add Provolone slices during the final minute of grilling so the cheese melts.
